My family is relocating to San Diego area, what are the best restaurants to "work" in?

My husband usually takes restaurant/ server positions to supplement our income (he watches our little girl full-time). He has a vast knowledge of wine, spirits, and beers, but really isn't the bartender type. Are there any fine dining or casual restaurants were patrons tip well, and the customers are steady?
