If your looking for really excellent food, you can't go wrong with the tasting menus at addison, market, or el bizcocho. I doubt they're the most expensive places to eat. I'm guilty of trying addison and market after each got glowing reviews by the LA Times food critic, but I've had fantastic dinners at all three. I didnt shell out for the wine pairing though...

El Bizcocho

7 course tasting menu $105, add $50 for wine pairing

There's also:

Mille Fluer, Cavillion, Pamplemousse Grille, Arterra, AR Valentien.

If your willing to drive up to LA, the Bazaar is awesome, and i've had great dinners at Sona and Providence too. Probably the best in LA from what i've heard (havent been yet) is Urasawa in Beverly Hills.Looking for the best restaurant in San Diego - Money no Object?
